Opened up the Big Blue today for a quick check to see how the blue veining is progressing.
Results are below – the marbling is pretty awesome, but the taste is somewhat lacking at the moment.

It’s gone back into 10C @ 80-90% humidity for another few weeks to see how the taste develops.
Texture was a little dry, caused by me putting it in the wrong fridge (18C) for almost a week!
The little ones were pretty much ruined unfortunately – way too dry, but a stronger flavour.
